I have busy mornings. If you've read some of my blog posts you know that I prefer to work out in the morning. Even though I get up very early (around 6ish); between working out, checking & answering work emails, getting dressed and trying to do a couple of loads of laundry...I don't have a lot of time, especially for fancy breakfasts. That being said, I am also not a fan of boring breakfasts or big breakfasts. I like them to be tasty, satisfying but not too heavy.
This recipe is my quick and easy breakfast, that I have most mornings. It tastes like a bit like a creme caramel, due to the combination of maple syrup and blueberry flavours. It is a bit like a dessert, but still healthy. It also has a nice dose of protein, so it is slow burning. This means that I don't have that mid-morning energy crash, which would normally have me reaching for a coffee or something sweet. You can adapt this recipe to include some cooked oatmeal, to give you extra fibre and more of a full feeling.

1/2 cup of unflavoured Greek Yogurt (5% fat)
1/4 cup of Blueberries
1/4 cup of walnut halves (plain, unsalted), approx. 7-8 halves
1 tablespoon of maple syrup
